Naming baby after grandma, but changing the spelling...?

I think it still counts. A lot of people (including my family) consider using the first letter of a relative's name for their child's name to be naming after that person. For example my mother, Wendy Robin, was named after her grandfather, William Robert. Joan and Joanne/Joanna are so close that they're basically the same name.
